A new attempt, a new delicious and healthy recipe ;).
I have to admit that the idea for this recipe came from a necessity, the need to eat something for breakfast on a weekend when I hadn’t had time to do the shopping, and the ingredients below were the only ones in the fridge. I couldn’t have imagined that something so tasty would come out and that the ingredients would match so well that I can firmly say that it’s the best omelette I’ve eaten so far.
So I used the ingredients below: 2 eggs, a few broccoli florets, a bit of parmesan, 1 large clove of garlic and a fresh basil leaf (I have some pots on the balcony).
I heated the oven to 180 degrees. I beat the two eggs very well, added a little Parmesan and then crushed the garlic together with salt and fresh basil in a mortar and added them to the composition. I poured the mixture into 2 muffin tins, placed the broccoli florets by gently dipping them in the above mixture, then placed a slice of Parmesan on top. I put the omelette in the oven and left it for 10-15 minutes, until it doubled in volume (you can check the inside of the composition with a toothpick to see if it is done).
That’s about it, a very pleasant surprise that I highly recommend;).
