Because I gave up commercial sausages a long time ago, I started buying smoked or marinated salmon, thinking that it is better than sausages, even if it is not completely free of chemicals either.
So I had made a compromise: instead of looking for the chemical-free alternative, I took the superficial attitude very often found in our country and said “I’ll leave it as it is”. This on a superficial level, as I knew in myself that it is not very good to indulge. Some time ago, however, I spoke on Facebook with a friend from the USA who, at the top, told me that he makes marinated salmon at home and sent me a Canadian recipe for salmon. And that’s how the story of home-marinated salmon began ;).
I used the following ingredients:

450 gr. of fresh salmon fillets (fishing, not aquaculture);

30 gr. of salt (about 2 tablespoons);

25 gr. of brown sugar (about 2 tablespoons);

4 gr. of freshly ground pepper (about 2 tablespoons);

1 bunch of fresh dill.
The fish, even if I bought it fresh, I preferred to freeze it overnight, because I don’t know how hygienically it was handled before it reached me. Then I thawed it in the refrigerator so as not to lose its nutritional properties. I washed it well, dried it on a napkin, removed the bones that remained and put it on a plastic sheet. I mixed salt, sugar and ground pepper in a bowl and put it over the fish. I washed the dill well, dried it and put it on top without chopping it.
I wrapped the salmon in foil with all the above ingredients, put it on a plate and put it in the fridge for 4 days. About once every 12 hours, I turned it from one side to the other, so that all sides are soaked with the juice formed.
After 4 days I took it out of the fridge, took the dill from the top, wiped the fish lightly with a napkin and with great emotions I cut a thin slice and tasted it… a delight, without exaggerating :).
The marinated salmon is eaten cut into thin slices, with salad and homemade mustard.
That’s about it, healthy thanks to the high intake of Omega 3, tryptophan, vitamin D, selenium, vitamin B3, vitamin B12, phosphorus, magnesium and vitamin B6, tasty and without synthetic preservatives.
