The inspiration for this recipe came from Violeta, a hair&beauty and healthy eating passionate friend.
She told me that she made digestive biscuits from wholemeal flour and that they turned out very good, and from here to my recipe was only one step ;).
In order not to waste time, I made two dishes from the start, some with dark chocolate and some with candied fruit. The good news is that until almost the end the recipe is common, at the end you can divide the dough in two, in one you can add chopped dark chocolate and in the other candied fruit.
So I used the following ingredients for a whole pan of biscuits (a standard stove pan): 6 tablespoons of wholemeal flour, 4 tablespoons of bran, 4 tablespoons of wholemeal oatmeal, 4 tablespoons of brown sugar, 1 tablespoon of sesame seeds, 1 tablespoon of flax seeds, 1 tablespoon of sunflower seeds, a few hazelnuts (you can also use walnuts), 1 tablespoon of olive oil, 1 pinch of salt, 2 tablespoons of finely chopped candied fruit (I used strawberries candied fruit) and 2 tablespoons of chopped dark chocolate.
I mixed the hazelnuts with the brown sugar and half the amount of oatmeal in the blender until they reached the consistency of a finer paste. I put the mix in a bowl, added wholemeal flour, bran, seeds, oatmeal and a pinch of salt and a little warm water (about 8-10 tablespoons) and mixed the dough well until it became compact. At the end, I added the olive oil and mixed again until it was incorporated. I divided the dough into 2 approximately equal pieces and mixed each one separately with one final ingredient, with the candied fruits and with chopped chocolate and made 2 dumplings.
I sprinkled a bit of wholemeal flour on the work surface and spread each piece of dough with a rolling pin about the thickness shown in the picture. The dough is a little sticky, so I recommend you to sprinkle a little flour on the dough as well.
I then cut the dough with simple round shapes (you can also try using a glass if you don’t have shapes) and put the biscuits formed in this way in a tray lined with baking paper.
I put them in the oven at 170 degrees Celsius for 10-12 minutes. In no case should you leave them in the oven longer because otherwise they will harden very much, because I did not use any leavening agent.
That’s the thing about biscuits, healthy thanks to the high fiber intake and delicious for breakfast or as a snack throughout the day.
